I'm calling this the best cauliflower mac and cheese because the majority of the recipes online claiming to be cauliflower mac and cheese have no pasta! This is false advertising in my books! I have used rigatoni so maybe not strictly the 'mac' in mac and cheese but pasta none the less. It's cheesy, insanely delicious and a MUST!
