Kinder Cookie Bars

Description

  • 190g unsalted butter, softened
  • 125g light brown sugar
  • 100g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 280g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 16 x 12g Kinder bars

Ingredients

  • 190g unsalted butter

  • 1 tsp vanilla extract
  • 280g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt

Instructions

  1. Preheat the oven to 180°C (160°C for a fan oven)
  2. Grease and line a 9x9 inch cake tin (or 8x8 inch cake tin)
  3. In a large bowl, beat together the butter, brown sugar and caster sugar for 2-3 minutes, until light and creamy
  4. Add in the eggs and vanilla extract. Mix in for 2-3 minutes until fully combined
  5. Pour in the flour, bicarbonate of soda and salt. Gently mix for 2 minutes, being careful not to overmix the batter
  6. Pour half the cookie bar batter into the cake tin and smooth over
  7. Place the Kinder bars over the cookie batter, creating a layer of Kinder bars on top
  8. Pour over the remaining half of the cookie bar batter and smooth over
  9. Bake for 25-28 mins, until it has a slight wobble in the middle
  10. Optional - Top with remaining Kinder pieces 
  11. Leave to cool completely in the tin, then slice into 16 pieces and enjoy!

Notes

If you use a 8x8 cake tin, you'll likely want to bake it closer to the 28 minutes
